 Make your own rempah, or spice paste to thicken curries.
 This recipe works with most dishes and will keep for a month in the fridge.


 

Ingredients:

1 kg onions, peeled & cut into chunks
2 stalks lemongrass (use only 6cm from root), sliced thinly
10 candlenuts (buah keras), rinsed & pat dry
1 tbsp belacan
5 dried chillies, soaked in hot water, rinsed and ground until fine
1 tsp turmeric
1 cup of oil
1 cup of water



 

Method:

1. Grind onions, lemongrass, belacan and candlenuts into a paste.
2. In a bowl, mix the paste with ground chilli and turmeric
3. In a heated wok, stir-fry rempah for 5-10 minutes or until browned.  Remove and leave to cool. Refrigerate until ready to use.

A sample recipe for using this rempah is Minced Chicken with Long Beans.
