Make your own rempah, or spice paste to thicken curries.
This recipe works with most dishes and will keep for a month in the
fridge.

Ingredients:
|
1 kg onions, peeled &
cut into chunks |
|
|
2 stalks lemongrass (use
only 6cm from root), sliced thinly |
|
|
10 candlenuts (buah
keras), rinsed & pat dry |
|
|
1 tbsp belacan |
|
|
5 dried chillies, soaked
in hot water, rinsed and ground until fine |
|
|
1 tsp turmeric |
|
|
1 cup of oil |
|
|
1 cup of water |
|

Method:
1. |
Grind onions,
lemongrass, belacan and candlenuts into a paste. |

In a bowl, mix the
paste with ground chilli and turmeric |
3. |
In a heated wok,
stir-fry rempah for 5-10 minutes or until browned. Remove and
leave to cool. Refrigerate until ready to use. |
