This is a light, not-too-hot sambal made with fresh chillies &
tomatoes. This dish keeps quite well, and can be made a day or two
ahead and kept refrigerated.

Ingredients:

4-5 fresh red chillies,
roughly sliced |

4-5 shallots or 1 onion,
roughly sliced |
|
|
1 inch piece
belacan |
|
|
1 clove garlic |
|
|
1 onion sliced |
|
|
1 tbsp oil |
|
|
300-400 gm medium-sized
prawns, shelled |
|
|
2 ripe, medium-sized
fresh onion |
|
|
Salt |
|

Sugar |

Method:
1. |
Blend chillies,
shallots, garlic &
belacan together until a fine paste is formed. Add sugar, salt &
assam jawa. Taste & adjust seasonings, add more salt &
sugar if needed. |

Heat the oil in a wok
& fry the ground ingredients until fragrant & most of the liquid has
evaporated. Add the prawns, tomatoes & sliced onion, & cook over
low heat for 10-15 mins until cooked. Season with a little salt
& a pinch of sugar to taste. |
