Ingredients:

1 tbsp oil |
|

4 chicken chops |
|
|
1/2 cup orange marmalade |
|
|
2 tbsp chutney (try
lime or mango) |
|
|
2 tbsp orange juice |
|
|
1 tsp grated fresh
ginger |
|
|
1 clove garlic, crushed |
|
|
1/2 tsp ground cumin |
|
|
2 spring onions, sliced |
|
|
Steamed asparagus to
serve (10-12 stalks) |

Mashed together:
|

2 medium potatoes,
boiled & chopped |
|
|
25 gm butter |
|
|
2 tbsp fresh milk |
|

Method:
1. |
Heat oil in
a pan. Add chicken, cook for 3 minutes on each side, or until
juices are pink to clear. Remove & cover. Keep warm. |

Cook marmalade,
chutney, juice, ginger, garlic & cumin in a small pan for about
4 minutes. Stir in spring onions. |

Serve chicken with
orange sauce, mashed potatoes. Garnish with 2 to 3 stalks
asparagus for each plate. |
