A sweet rich fragrant dessert using a combination of green beans &
durian.

Ingredients:

200 gm dried green beans
(kacang hijau), rinsed well |
|
|
1.3 litres of
water |
|
|
1 small durian,
seeded to get 0.5 cup of durian flesh |
|
|
2 pandan leaves, tied
into a knot |
|
|
120 gm Gula Melaka,
roughly chopped |
|
|
120 ml thick coconut
milk, squeezed from half a coconut |
|
|
Pinch of Salt |

Method:
1. |
Cover beans with water
and leave to soak and soften for 30 minutes. Drain, add 1.3
litres fresh water and bring to a boil. Allow to simmer over a
low fire until beans are soft and most of the liquid has evaporated. |

Add durian, pandan
leaves and sugar to the beans in the pan and cook for 10 minutes - if
the mixture looks too thick, add 0.5 cup of water. |

Add coconut milk and
salt, and bring mixture to a boil, stirring constantly to prevent the
coconut milk from curdling. After 1-2 minutes, remove pan from
heat and serve. |
