Ingredients:

300 gm dried chinese mushrooms
1 bombay onion, sliced
10 dried chillies, cut into 3 cm length wise
1 spring onion, cut into 3 cm length wise
5 slices ginger

Seasoning:

1 tbsp oyster sauce
1/2 tsp light soya sauce
1 tsp sugar
1/2 tsp black vinegar
a little dark soya sauce

 



 

Method:

1. Soak dried chinese mushroom in hot water unitl they turned soft. Remove stems. Cut a cross on top of the mushrooms. This is for aesthetic value and also to ensure that the seasoning is well-absorbed by the mushrooms during cooking.
2. Heat up 1 tbsp oil, saute ginger and dried chillies untill fragrant.
3. Add in the remaining of the ingredients, seasoning and stir-fry for 2 minutes. 
4. Dish up and serve hot.
