BUTTER-MILK PUDDING
If you are on a diet or concerned about gaining those unwanted pounds,
rather leave this page now! this is a comfort pudding for winter. An age-old recipe. Delicious after a winter dinner. Yum Yummm!
- 3 1/2 ounces butter, soft
- 6 ounces sugar
- 3 large eggs, beaten
- 1 cup/ flour
- 2 teaspoons baking powder (not soda)
- 1/2 teaspoon salt
- 1 quart buttermilk
- 2 teaspoons vanilla
- 5 teaspoons sugar (keep in a little container.)
- Set oven at 350 deg F/180 deg Celsius.
- Grease a fairly deep oven dish of medium size.
- Beat or whip butter until light and fluffy.
- Add sugar, and cream the two together.
- Add the beaten egg little by little, beating well after each addition.
- Sift dry ingredients together.
- Add dry ingredients alternately with the buttermilk to the butter mixture, whisking lightly after each addition.
- Ladle into prepared greased oven dish.
- Bake about 35 minutes until the pudding is slightly puffy and golden on top.
- Take out of oven, strew over the cinnamon-sugar you have prepared, and bake another 10 - 15 minutes.
- Serve hot or lukewarm, as is, or with warm custard or ice-cream.
