White Butter Delight
Ingredients:
110ml (1/2 cup) milk
125 grams good quality white cooking chocolate, chopped
60 grams (1/4 cup) caster sugar
1 x 60 gram egg yolk
120 grams butter, softened to room temperature
Method:
Place the milk in the saucepan and allow to come slowly to the boil.
Remove from the heat and immediately add the chocolate, stirring until melted, then add the sugar and continue stirring until it is dissolved. Add the egg yolk and stir well until combined. Allow mixture to cool to room temperature (almost cold).
Using a wooden spoon, stir the chocolate mixture into the soft butter in three to four amounts, stirring only until the mixture is just combined each time. When all of the chocolate mixture has been stirred through, allow the mixture to sit for 5 minutes before using on your cake.
This recipe makes enough to cover one 23cm cake
Variations to this Recipe:
* Add some shredded orange and chocolate dots for a choc-orange butter cream
* Add some coffee and Tia Maria to make a Mocha Butter Delight butter cream.
