Orange poppyseed cake:
I know this is not a chocolate recipe but its a great cake for afternoon tea. As per the mudcake, purchase a packet mix of this cake and make as per instructions, again, I substitute the oil for butter. Now for the "cheat" part, toss out the cream cheese frosting provided in the packet its time to create our own. You will need a 250 gram tub of soft cream cheese, 4 cups of sifted icing sugar and 80 grams of soft butter. Place all of the ingredients in a mixer and combine till smooth....have a quick taste of the mixture, if it's not sweet enough add a little more icing sugar.....or if desired a squeeze of lemon juice. Slice cooled cake in half and pop a dollop of the mixture on and spread.....cover with top layer and proceed to ice the rest of the cake.
