Chocolate covered Marshmallows:

This is a very quick and simple recipe, grab a pack of your favourite flavoured marshmallows and a chocolate dipping spoon...this spoon is metallic and is available from cake decorating shops....instead of a solid end it has a spiral that your marshmallow can sit in for dipping and will allow excess chocolate to drain away. I once again use Haigh's cooking chocolate as it gives a nice glossy finish, or you can use Cadbury's family block.....I find though that if you don't work quick enough this tends to congeal very quickly, but the results are YUMMY.

 

TIP: Turn out coated marshmallows onto a tray lined with baking paper and refrigerate for a few hours until the chocolate coats are hard.....the marshmallow will have a creamer texture.

Alternative: if you own a fondue, you can prepare the chocolate and have your guests "dip" their own marshmallows and eat while warm and gooey.
