Melting your Chocolate
To avoid chocolate melting unevenly, always chop into small pieces.
The most effective way to melt chocolate is in a double-boiler; Put chopped chocolate into a heavy dry, heatproof bowl, then place over a pan of gently simmering water. Remove from head and continuously work chocolate with a spoon or rubber spatula until smooth.
It's best to avoid using a wooden spoon as they tend to hold strong flavours from previous dishes that can be transferred to the chocolate.
