Choc-chip Cookies
Ingredients:
185 grams plain flour (1 1/2 cups)
90 grams cocoa powder (3/4 cup)
280 grams soft brown sugar (1 1/2 cups)
180 grams butter
150 grams dark chocolate (chopped)
3 egges lightly beaten
1 cup dark choc bits
1/3 cup white choc bits
Method:
Preheat oven to a moderate temp 180 degrees Celsius 160 for a fan forced oven and line 2 baking trays with baking paper.
Sift the flour and cocoa into a large mixing bowl and stir in the sugar. Place butter and chocolate in a medium sized pan and stir over low heat until mixture is smooth. Pour the choc & butter mixture into the bowl and mix until well combined. Next stir in your choc bits.
Using an icecream scoop for even measurements, scoop out cookie mixture and drop them on to the baking tray's (remember to allow room for spreading).
Bake cookies for around 12 - 15 minutes. Leave cookies on the tray for 5 minutes before turning them on to a wire rack to cool.
