Chocolate Frosting

 

Ingredients:

6 tablespoons good quality cocoa, sifted (I use Haigh's)

500 grams icing sugar, sifted

1 1/2 tablespoons liquid glucose

75 grams unsalted butter, softened

2 1/2 tablespoons water

 

Method:

  1. Slowly blend the sifted cocoa and icing sugar, glucose syrup and butter in a mixing bowl.

  2. When combined, slowly add the water, beating all the time.

  3. When the ingredients have again been combined beat the mixure for a further 15 minutes until the frosting is light and fluffy.

 

This recipe makes enough to cover one 23cm cake
