CREAMY CHOCOLATE MOUSSE

 

Ingredients:

120 grams soft cream cheese

150 grams caster sugar

2 x 60 gram egg yolks

600ml thickened cream

125 grams dark chocolate (Haigh's) melted

125 grams milk cooking chocoalte melted

Method:

1. Beat the cream cheese, sugar and egg yolks until smooth. (Note: the sugar may not dissolve completely).

2. Whip the cream until stiff and pop into the fridge until required.

3. Quickly stir the melted chocolates into the smooth cream cheese mixture and immediately fold through the whipped cream by hand. (The warmth of your hand will assist the stiff chocolate to fold through the cream.

4. Spoon the mousse into 6 glasses and chill for at least 1 hour before serving.
