Coconut Macaroons

 

Ingredients:

4 egg whites

250 grams caster sugar

250 grams coconut

dash vanilla essence

 

Method:

  1. Beat the egg whites until soft peaks form.

  2. Slowly add the caster sugar and beat until dissolved.....add vanilla essence.

  3. Gradually mix the coconut in by hand.

  4. Spoon mixture onto lined baking trays and bake in the oven for approx 12 minutes or until biscuit starts to turn a light golden brown.
