Club Sandwich
Ingredients:
2 chicken fillets
1 tablespoon olive oil
4 rashers of bacon (Rind removed)
6 slices large white bread (sliced)
softened butter for spreading
1 tomato, sliced
handful mixed salad greens
3 tablespoons good quality mayonaise
freshly ground black pepper
salt if desired
Method:
Brush the chicken fillets with the olive oil then cook on a pre-heated char-grill or pan fry until tender.
Remove from the heat.
Grill or pan-fry the bacon until crispy. (I microwave mine). Drain well on paper towels.
Toast the bread until golden and spread with the butter.
Sandwich 3 slices of bread with a chicken fillet, mayonnaise, 2 bacon rashers, tomato and salad greens. Season with pepper (and salt if desired). Repeat with the remaining slices of bread.
The desired look of your sandwich should be: bread, salad greens, chicken, bread, tomato, bacon, mayo, bread.
