FUDGE CHOCOLATE SAUCE

Ingredients:

2/3 cup of cream

3/4 cup brown sugar

100 grams dark chocolate - broken into pieces

2 tablespoons butter

1 tsp vanilla essence

Method:

In a small, heavy saucepan, heat cream and brown sugar over a moderate heat, stirring until sugar has dissolved. Add chocolate and butter and continue to cook, stirring until smooth. Bring the mixture to the boil and cook for 5 minutes stirring continuously. Remove from heat and add vanilla.

This sauce can be served over ice-cream, cake or a banana split.
