Chocolate Water Icing

 

Ingredients:

1 1/2 cups (240 grams) icing sugar

3 tablespoons good quality cocoa (Haighs)

50ml boiling water

 

Method:

  1. Sift the icing sugar and cocoa into a bowl.

  2. Add a little of the warm water at a time, firstly to make a stiff paste and then to thin it down to the required thickness.

  3. Spread onto your cake using a warm wet knife to give a smooth finish.

 

This recipe makes enough to cover one 23cm cake
