Boiled Chocolate Glaze

 

Ingredients:

1 cup (270 grams) Caster sugar

210 grams dark cooking chocolate (I use Haigh's), chopped

150ml water

 

Method:

  1. Place all the ingredients into a saucepan and slowly bring to the boil stirring continuously.

  2. Boil for 6 minutes, making sure that the mixture does not stick to the bottom of your saucepan.

  3. Allow to cool slightly before pouring over glazed or marzipan-covered cakes.

  4. Refrigerate until firm before cutting.

 

This recipe makes enough to cover one 23cm cake
