Baked Ricotta & Chocolate Cheesecake

 

Warning.......for those of you with a heart complaint or high choesterol ....don't look....turn back now!!! the amount of eggs in here is liable to give the healthy ones a heart-attack....but what a way to go!!

 

Ingredients:

700 grams Ricotta Cheese

10 Egg Yolks

12 Eggs

300ml cream

600 grams sugar

350 grams grated Haigh's Dark Chocolate

150ml Frangelico liqueur

dash vanilla essence

Method:

* Beat the Frangelico liqueur and sugar.

* Gradually add ALL of the eggs and cream

* Fold through the ricotta and chocolate - do this carefully as you want to retain the texture.

* Pour the mixture into a sweet pastry case and bake at 150C for approx 1.5 hours or until set.
