(4) Chinese Seaweed Soup with Egg and Dried Anchovies








Ingredients

2 cups of Dried Chilli Peppers
1 tsp. salt or to taste
1 cup of cooking oil (canola or vegetable)

Methods

1.  Put the dried chilli pepper in a saucepan, covered with enough water to cover and boil it.  When boiled, turned off the heat and covered and let it sit for 15 mins or until the dried chilli peppers have softened.  Reserved the liquid.

2.  Use a blender to blend the chilli along with some of the reserved liquid until fine.  Set aside to cool.

3.  At the meantime, heat 1 cup of oil in a saucepan in medium heat until just warm.  Add the blended chilli in and stirred it around.  Add salt to taste.  Turn off heat and let it cool before storing it in a jar.  Keep in the refrigerator.

( For added spicyness, add 1 Tbp. of cayenne pepper powder or more to suit your tastebud.  Red chilli powder can be added as well.)

(3) Homemade Ground Chilli in Oil










Ingredients

1/4 of one round Dried Chinese Seaweed
1/4 cup of dried anchovies (only a few)
1 tsp. chicken stock granules
Salt to taste
1 egg, beaten
4 cups of water


Methods

1.  Boiled a medium sized pot with 4 cups of water.  When boiled, add in dried anchovies and chicken stock granules.  Stir until chicken granules are dissolved.

2.  Washed the dried seaweed with water and add it into the soup.  Stir it around to break the seaweed.  Add in beaten egg, when pouring, make a 8 shape with your fork to create egg drop soup consistency.  Add salt to taste.

3.  This is an easy and quick cooking soup and it tastes absolutely delicious.
