SALSA #3 CANNING OR SALSA FOR A CROWD
NOTES: USE PROCCESER. I tried making chunky salsa but I found it wasn't worth the trouble. I usually don't can using pre canned tomatoes You can cut recipe down and keep refrigerated keeps quite awhile( or you can buy a bunch of chips and have a very large party).You may want to hot water bath this for about 15 mins but it should be high enough ph so you don't have to.
ingredients:
1 Jumbo onion , finely chopped
2 QTS asst chiles, seeded deveined and finely chopped(leave seeds and veins in for more picante or use hotter chiles
2 ripe red bell peppers chopped
enough tomatoes to fill a 12 qt. stockpot tomatoes, peeled, seeded and finely chopped( or enough canned tomatoes ground)
1 large bunch finely chopped fresh cilantro
1 head garlic crushed or chopped finely
1/4 cup salt you may want to eliminate or
cut back if you use canned tomatoes
2 cups fresh lime juice
1/2 cup vinegar
1/4 cup sugar
Optional:
4 dried chipotle chiles soaked till soft and processed fine
1 can chipotles in adobo sauce processed
either option was pronounced tasty by all
Instuctions:
combine all ingredients in a 12 qt.stockpot simmer for a short time hot pack in bottles Will provide links for bottling instuctions
