1 sm Eggplant
1 md Zucchini
1 lg Tomato
1 Green bell pepper
1 c Sliced onion
Non-stick cooking spray
1 tb Chopped basil
2 ts Olive oil
1/2 ts Oregano
1/4 ts Salt
1/4 ts Pepper

Peel and slice the eggplant, seed pepper and tomato.
Over a double thickness of paper towels, sprinkle
eggplant with salt. Let stand 30 minutes. Wash salt
off eggplant. Slice remaining vegetables and place
near grill.

Spray grill rack and position it on grid over hot or
ashen coals. Place eggplant on rack first, as it takes
longer to cook, 10 to 20 minutes, depending on heat of
coals and distance from them. Add remaining vegetables.
Grill vegetables about 2 minutes per side, turning
them as necessary with a long-handled spatula and fork.
Vegetables will char slightly and should be hot.
Put vegetables on a large serving plate.

Sprinkle vegetables with basil, olive oil, oregano,
salt and pepper.
Good hot or cold.

NOTE: Vegetables grill well over ashen rather than
hot coals.
