Title: Vegetable Lo Mein

8 oz Uncooked spaghetti/substitut
3/4 c Vegetable Broth
OR
Chicken Broth,
1/4 c Soy sauce OR to taste
2 ts Cornstarch
2 tb Vegetable oil
3 1/2 c Slice Mushrooms
3 c Diagonally sliced celery
1 1/2 c Sliced sweet red pepper
2 c Bean sprouts
1/2 c Scallions, cut in 1" pieces
1 1/4 c Snow peas
1. Cook spaghetti (or substitute) according to
package directions.
2. Meanwhile, in a cup, combine the broth, soy sauce
and cornstarch
until smooth; set aside.
3. In a wok or large saucepan heat oil until hot.
Add mushrooms, celery,
and red peppers;
cook and stir until celery is
nearly crisp-tender,
about 3 minutes. Stir in bean sprouts,
scallions,
snow peas and
reserved cornstarch mixture.
4. Cook and stir until mixture thickens and boils,
about 1 minute.
5. Drain spaghetti; toss with vegetables. Serve
immediately.
