
MM: Barley and Mushroom Saute

Title: Barley and Mushroom Saute

1/2 lb Shiitake mushrooms; trim,
-slice
3 Scallions; chop
1 tb Olive oil
3/4 c Quick-cooking pearl barley;
1 ts Salt
1 ts Fresh sage; mince, or
1/4 ts Dried
1 c Cherry tomatoes; halve
2 oz Parmesan; shred
In medium saucepan over medium heat, cook mushrooms
and scallions in hot oil 1 minute, stirring
occasionally. Add 1-1/2 cups water and bring to a
boil. Stir in barley, salt and sage. Reduce heat to
medium-low; cover and simmer 5 minutes. Stir in
tomatoes. Cover and simmer 3 minutes more or until
tender. Sprinkle with cheese.
