Blueberry Lemon Vinegar - Preserves - Charlie's Corner


Blueberry Lemon Vinegar

Makes: 4 cups

2 cups blueberries
1 tablespoon grated lemon peel
1/4 cup fresh lemon juice
1/2 cup sugar
1/2 cup water
2 cups white vinegar

In large saucepan, combine all ingredients except vinegar. Cook
over medium heat till berries pop and liquid thickens slightly,
stirring occasionally. Strain mixture through cheesecloth into
large bowl. Stir in vinegar. Pour into decorative bottles.
Let stand 3 weeks before using.
