Thanksgiving Chestnut Croquettes

1/4 Cup canola or olive oil
1 Cup chopped celery stalks and leaves
1/2 Cup minced onion
1 Cup bread crumbs -- (1 to 2 cups)
4 Cups steamed brown rice
1 Tsp sage or other dried herbs
2 Cups chopped fine boiled chestnuts
1 Tsp dried veggie broth
1/4 Tsp thyme
1/2 Cup minced parsley
1/4 Cup Almond butter
or peanut butter
Salt to taste
In a skillet, put 4 tablespoons oil, celery and onion.
Saute until golden yellow. Add some bread crumbs (about 1/4
Cup). Heat, stirring to prevent browning. Turn into a deep
bowl. Add rice, sage, chestnuts, broth, thyme, parsley,
almond butter and salt. Mix well with hands or spoon. Add
soft bread crumbs as necessary to make desired consistency
for shaping croquettes. Shape croquettes and sprinkle with
oil. Bake on cookie sheet or pan fry in remaining oil until
golden brown. Delicious with gravy.
