Blueberry Syrup

1 cup blueberries
1/2 cup apple juice
1 1/2 teaspoons cornstarch
3 packets equal sweetener
1/2 teaspoon lemon peel -- finely shredded
1 tablespoon lemon juice
1 tablespoon butter or margarine
In a blender container or food processor bowl, combine
berries and apple juice;
blend or process until pureed.
Transfer to a saucepan; stir in cornstarch.
Cook and stir
until thickened and bubbly.
Cook and stir for 2 min. more.
Remove from heat.
Stir in equal, lemon peel, lemon juice and
margarine.
Serve over pancakes, waffles or french toast.
Serving size: 1 tbsp.
