LIGHT PUMPKIN PIE

1 1/2 c Evaporated skim milk
1/2 c Ricotta cheese, part skim milk
1/4 c Equal sweetener
1 1/2 c Canned mashed pumpkin
2 ts Vanilla extract
1 1/2 ts Pumpkin pie spice
3 Egg whites -- see note

-----crust-----
3/4 c Vanilla wafer crumbs
2 tb Reduced calorie margarine

Recipe by: Miss Daisy on a morning TV show. Cut butter
into vanilla wafer crumbs and line the bottom of a
deep pie dish with 1/2 cup of the crumb mixture. Press
the crumbs tightly against the bottom of the pan (a
smooth meat pounder works perfectly.) Mix pie
ingredients in blender or food processor and spoon
carefully into pan. Use remaining crumbs to decorate
top of pie, making a ring around the perimeter about
3/4" wide. Bake at 325 degrees for 30-35 minutes. Let
cool and refrigerate until serving.
