MM: Hearty Beef Stew

Title: Hearty Beef Stew

Yield: 6 Servings

2 lb Stew beef, cut in 1 inch -cubes
5 md Carrots cut in 1 inch -pieces
1 lg Onion cut in chunks
3 Stalks of celery, sliced
2 cn Beef broth (undiluted)
3/4 c Quick cooking tapioca
2 Bay leaves
-salt and pepper to taste
5 md Potatoes

TO BE ADDED LAST 30 MINS RIGHT BEFORE SERVING 5 medium.
Potatoes peeled and cut in 1 inch cubes Cooked
until just done and add to stew.

Trim all fat from meat. Put all ingredients (except potatoes)
in CROCKPOT. Mix thoroughly. Cover and cook on LOW
for 12 hours. or HIGH 5-6 hours.
Add cooked potatoes, stir with cooked stew, and let
sit for about 30 minutes for flavor to merge.

Serves 6 - 8

Depending on how much juice is made by meat and
vegetables, more water might be needed if gravy
becomes too thick.
