Title: Barbecued Chicken and Black Bean Burritos

3 Chicken breast halves; skin,
-bone, bite-size chunks
1 sm Onion; chop
1 tb Olive oil
1 ts Bottled minced garlic
15 oz Can black beans; rinse,
-drain
1/3 c Barbecue sauce
1/2 c Cheddar cheese; shred fine
4 10" fat-free flour tortillas
Heat the oil in a 12" nonstick skillet over medium
heat. Add the chicken to the pan. Increase the heat to
medium-high. When all of the chicken is added, cook 2
minutes, stirring from time to time. Add the onion and
garlic and continue cooking, stirring frequently,
until the chicken is no longer pink in the center.
Measure out the barbecue sauce and cheese. Set aside.
When the chicken is cooked through, add the beans and
barbecue sauce to the skillet, reduce heat to medium
and stir well to coat the chicken with sauce. Sprinkle
the cheese evenly over the skillet and continue to
cook without stirring until the cheese melts, about 2
to 3 minutes. Warm the tortillas in the microwave
according to the package directions. To serve, spoon
equal amounts of the chicken mixture in the center of
each tortilla, dollop with sour cream (if desired),
and roll up burrito-style. Notes: If you like spicy
food, add a minced jalapeno pepper along with the
onion and garlic. If you want some vegetables, add 1
1/2 c frozen bell pepper strips along with the beans.
Garnish with reduced-fat sour cream, if desired. 424
