Title: Stuffed Tomatoes with Spinach

4 lg Tomatoes
4 14-inch squares heavy duty Foil for making nests

-------------------------STUFFING-------------------------

10 oz Package frozen Spinach, -thawed, or 1 cup cooked -fresh spinach
1 sm Onion, diced fine
4 cl Caramelized Garlic
1/4 ts Ground nutmeg
Salt and Pepper to taste
2 tb Grated Parmesan cheese
2 tb Bread crumbs

Stuffed tomatoes are a good way to use up the garden's
bounty,but any fresh vegetable, such as zucchini or
peppers, can be substituted.Grilling the tomatoes in
foil nests helps them keep their shape.

Grill Temperature = Medium ^^^^^^^^^^^^^^^^^^^^^^^^^^^

Cut a slice from the stem end of each tomato. Remove
the pulp and seeds with a teaspoon and reserve. Invert
the tomatoes and drain on paper towels.

In a medium bowl, combine the reserved tomato pulp, the
spinach,onions,garlic,nutmeg,salt and pepper. Spoon
the mixture back into the tomato halves(shells) and
sprinkle with Parmesan cheese and bread crumbs. Fasion
a nest with each square of foil and place a tomato in
each one. Grill for 15 minutes.

Charlies Note:
I added some Grated Parmesan cheese to the spinich
mixture about 1 1/2 Tablespoons .
