Artichoke Pizza

Amount Measure Ingredient -- Preparation Method

1 c Grated parmesan cheese
1 c Mayonnaise
1 16 oz Can artichoke hearts
1 Piece puff pastry -- thawed
1 c Swiss cheese, finely grated
1/2 Green and red bell pepper - thinly sliced

In a blender or food processor, place the first three
ingredients. Blend until smooth.
Roll out chilled but thawed puff pastry sheet, in a large
rectangle to fit a cookie sheet.
Transfer to cookie sheet and bake for 5 minutes at 375 degrees.
Spread artichoke mixture onto puff pastry and spread to edges.
Sprinkle grated Swiss cheese over the pizza.
Decorate with the sliced bell pepper.
Return to oven for 8 to 10 minutes, or until slightly
bubbly and edges are golden brown.
Let sit a few minutes before cutting.
Serve warm.
