Vegetable Soup { Minestra }
All kinds of vegetables in season, but those used are: Pumpkin, Gourds, Kohlrabi, carrots, unions, celery, cabbage, potatoes and marrow.
Other ingredients required are some oil, lard, pepper, salt and paste.
1 / 2 pound Macaroni or spaghetti and a level tablespoonful of tomato paste or tomato puree is also essential. Prepare the vegetables by chopping into small pieces. Wash thoroughly. Place the ingredients, excluding the paste, in a large pot and cover ingredients with water. When vegetables are done and with pot still boiling, add the macaroni or spaghetti. Let cook. Before serving add about 3-4 tablespoons of grated cheese |
