Soda Bread

2 1 / 4 cups plain flour.
1 packet baking powder. 
1 / 2 tsp salt.
1 tsp bicarbonate of soda.
2 tbsp castor sugar.
1 egg, lightly beaten.
Pinch of vanilla.
3/ 4 cup milk.
60 gm butter

Sift flour, slat and soda into bowl.
Rub in butter. Stir in sugar.
Beat egg with vanilla and two tablespoons of the milk.
Add egg mixture to dry ingredients with enough milk to make ingredients cling together.
Reserve a little milk for glazing. Turn dough onto lightly floured surface.
Knead until smooth. Place dough on lightly greased oven tray.
Press dough into 20 cm round.
Cut a deep cross on top of dough.
Brush with reserved milk.
Bake in moderately hot preheated oven for about 40 minutes.
Allow to cool.

Remove and serve
