Soda Biscuits
1 pound of flour 1 / 2 of a pound of castor sugar 1 / 4 of a pound of fresh butter 2 eggs 1 small teaspoonful of bicarbonate of soda
Put the flour into a clean basin. Rub in the butter and sugar, make a hole in the center, break the eggs and beat them up well with a wire egg whisk.
Dissolve the bicarbonate of soda in a little water, turn all the ingredients together into the hole and wet up into rather a soft paste, using a little milk if necessary.
Turn out on to the board, dry over and roll down in sheet as about 1 / 4 of an inch thick. Cut out with a small plain round cutter, set on to clean greased baking plates and bake in a warm oven.
