1 pound of potato flour
1 / 2 a pound of butter beaten to a cream
1 / 2 a pound of castor sugar
1 egg or the whites of 2
10 drops of essence of lemon
Mix the ingredients and beat them thoroughly for 10 minutes then pour into a greased cake tin
and bake for about 15 minutes in a rather quick oven.
Cooking time about 1 /2 an hour.
Sufficient for 1 cake
