Peach Poppy Seed Muffins :


1/3 plus 1 tablespoon cup olive oil 
1 cup sugar 
4 egg whites or egg substitute equivalent to 2 eggs 
1/2 teaspoon vanilla 
1-1/4 cups flour 
2 tablespoons poppy seeds 
1 teaspoon baking soda 
1/4 teaspoons salt 
1 jar (6 ounces) peach baby food

  In a mixing bowl, cream butter and sugar.
Add egg whites or substitute and vanilla; mix well.
Combine the flour, poppy seeds, baking soda and salt.
Add to creamed mixture alternately with baby food.
Fill paper-lined muffin cups two-thirds full.
Bake at 350-degrees 20 to 25 minutes or until muffins test done.
Recipe will yield about 1 dozen muffins
