Luncheon Cake
6 oz plain flour. 8 oz castor sugar. 3 eggs. 8 oz walnuts. 1 lb raisins. 2 tablespoons milk. 2 tablespoons honey. 4 oz butter. 1 / 2 teaspoon baking powder. 1 / 2 teaspoon ground nutmeg. 1 / 4 teaspoon salt, Vanilla. 1 / 4 teaspoon bicarbonate of soda.
Cream butter and sugar until light and fluffy. Beat eggs and vanilla together and add the creamed mixtures with sifted flour. Baking powder, salt and nutmeg. Stir in milk. Mix honey and bicarbonate of soda together and add to mixture. Stir in walnuts and raisins. Put mixture into greased and floured 2 lb loaf tin. Bake at 200c preheated oven for approximately 2 hours or until cooked [ Check with a tooth pick ]. Cool in tin before turning out. |
