Fish Skewers
500 gm firm fish [ boneless and cubed ] 1 tablespoon crushed garlic 8 cherry tomatoes 1 red + 1 green capsicum, diced 1/ 4 cup lemon juice 1 tablespoon fresh dill, chopped 1 / 2 teaspoon each: Salt + pepper + cumin + paprika + Tabasco sauce 2 tablespoons olive oil
Place fish in a bowl. Whisk together lemon juice, oil, dill, garlic and all the seasoning. Pour over fish mixing well. Marinate for 12 hours. Soak eight wooden in warm water for 20 minutes. Thread pieces of fish onto skewers alternately with capsicum and tomato. Cook on a hot barbecue plate or grill for 10 minutes, basting and turning regularly Serve with fried or curry rice and a tehine [ hommos ] salad |
