Easy Creole Sauce for Pasta
2 teaspoons olive oil. 1 green belle pepper, diced. 2 stalks celery, tough strings removed, thinly sliced. 1 small onion chopped. 1 tablespoon hot paprika. 1 teaspoon dry yellow mustard. 1 26 oz. [ 780 gm ] jar plain spaghetti sauce. 1 tablespoon red wine vinegar.
Heat olive oil in a large saucepan over medium heat. Add green peppers, celery and onions and cook, stirring often, until soft, about 5 minutes. Stir in paprika and mustard and cook for 30 seconds. Add spaghetti sauce and vinegar. Simmer for 5 minutes to blend flavors.
