Cheesy Potato Cakes

1 kg potatoes, peeled 
6 shallots finely chopped 
2 tbsp. Chopped parsley leaves
250 gm yellow cheese grated
2 tbsp. Plain flour 
oil for frying 
Salt + Pepper


Boil potatoes in salted water until tender. Drain well and mash.
Add 200 gm of the grated yellow cheese, the shallots and parsley to the mash.
Add salt and pepper to taste. Form eight patty shapes.
Put flour on a plate and lightly coat patties.
Heat enough oil in a large frying pan over medium low heat.
Do not have heat too high.
Add the patties in one layer and fry on both sides until goldened.
Remove on kitchen paper towels.
Serve potato cakes, topped with remaining cheese, and a rich green salad
