Candied Violets
Pick a large
number of Violets.
Spread them on a cookie sheet to dry for a few hours.
Beat an egg white to a froth.
Paint it on each flower with a fine brush.
Carefully pour fine white sugar over the flowers to coat them.
You can color the egg white purple for variety if you wish.
(Gum arabic can be substituted for the egg whites.)

Candied violets work beautifully
for garnishes on this cake.
Preheat Oven to 325 Degrees F

tablespoons softened butter, not melted
1 cup sugar
1 egg yolk, beaten
1/2 cup water
1/2 cup whole milk
1 1/2 cup flour, sifted
1 teaspoon baking powder
1 teaspoon vanilla
1 egg white
Cream the
softened butter and sugar together.
Mix water and milk together.
Add the beaten egg yolk to water/milk mixture.
Stir in the creamed butter, flour, baking powder and vanilla.
Beat the egg white stiff as meringue and fold it Gently
into the mixed batter.
Bake at a low heat for 25 minutes.
Don't jar the cake while it's baking or it'll fall and be
full of holes.
You can add chocolate glaze and/or candied violets when it comes
out of the oven.
Raisin
Bran Muffins
Makes 8 Muffins
Preheat Oven to 400 Degrees F
1/4 cup
softened butter
1 cup shredded wheat cereal
2/3 cup milk
1 1/2 teaspoon baking powder
1/2 cup raisins
1/4 teaspoon salt
1/4 cup brown sugar
1 egg
Mix milk and
cereal, set aside to soften.
Stir in the rest of ingredients just until moistened.
Fill 8 paper-lined muffin cups 2/3 full.
Bake for 18 to 20 minutes.
