Spelt Oatmeal Raisin Cookies

Spelt flour, like wheat, is available in whole grain or white. You can use either one in
this recipe.
� 3/4 cup raisins
� 1/4 cup chopped walnuts or almonds
� 2/3 cup boiling water
� 1 cup date sugar
� 3/4 cup safflower oil
� 1/2 cup Flax Egg Replacer
� 1/2 teaspoons vanilla extract
� 1/2 teaspoon almond extract
� 2 cups rolled oats
� 1 1/2 cups spelt flour
� 1/2 teaspoon baking soda
1. In a small bowl, pour water over raisins and nuts and soak for 1/2 hour.
2. Preheat oven to 350�. Lightly oil or line a baking sheet with parchment.
3. In a large bowl, combine date sugar, oil, Flax Egg Replacer, and extracts. Stir in
raisins, nuts, and soaking liquid. Add oats, flour, and soda, mixing with a
wooden spoon or with hands to an even consistency.
4. Spoon or scoop rounded tablespoonfuls onto prepared sheet and flatten slightly into
disks about 1/2 inch thick. Bake about 12 minutes, until edges begin to brown.
Repeat with remaining dough.
Makes about 4 dozen small cookies.
