Onset: 1 - 6 hours

Duration: 6 - 24 hours

Symptoms: nausea, vomiting, diarrhea, and
cramps, fatigue, dehydration.

Typical foods: ham, meat, poultry products, cream-filled pastries, cheese,
potato and meat salads.

Contamination source: handlers with sore throats or infected cuts. Also on skin, hair and nose. Animals can be carriers.

Prevention: wash hands, good personal hygiene, thorough heating and rapid cooling of foods.
