Purple Potatoes
DIRECTIONS:
1. Wash potatoes well. Do not peel.
2. Cut into quarters or large cubes.
3. Place on baking sheet lined with parchment paper.
4. Drizzle with olive oil, season with Kosher salt and fresh cracked pepper.
5. Add herbs as desired (such as Italian)
6. Place in hot oven (400°F) for 1 hour or until potatoes are fork tender.
