Romaine lettuce 4 to 5 leaves
Tomato (cut as desired)
Red Onion (optional)
Cucumber (thin skin)
Mint leaves (coarsely chopped)
Toasted Pita Bread (optional)
Black olives (any kind)
DRESSING:
Lemon or vinegar
Olive or Mazola oil
Salt and pepper
Garlic
Sumac (lemon flavored spice)
DIRECTIONS:
1. Open pita bread (medium size is best), spread out and toast in warm oven
until bread is golden brown in spots and crispy.
2. Wash lettuce in cold water; tomatoes and cucumbers can be washed with a slightly
soapy sponge.
3. Cut lettuce into 2"x 2" pieces, tomatoes into large cubes, cucumbers
into thin rounds and onions into thin half slices.
4. Drizzle with oil and lemon (or citric acid/lemon salt),add salt, pepper,
and sumac. Then add the mint.
5. Once the salad is well mixed and you are ready to serve then you break up
the toasted pita bread and gently toss them into the salad.
