Duration: 2 - 9 days
Symptoms: fever, severe diarrhea (bloody with severe abdominal cramps), vomiting, may cause kidney failure.
Typical foods: undercooked ground meats, unpasteurized milk, imported cheese, nonchlorinated water.
Contamination source: intestinal tract of animals and humans.
Prevention: cook meats well (155F 15 min)
pasteurize milk, avoid cross contamination, and good personal hygiene.
