CHINESE CHICKEN SALAD
1 Head Romaine Lettuce (washed and cut medium)
2-3 green scallions (cut on the diagonal)
1 can mandarine oranges (drained)
1 pkg raman noodles (broken up and toasted)
1/4 cup slivered almonds (toasteed)
2 Tablespoons sesame seeds (toasted)
2 breasts of chicken (marinated overnight) grilled
1. Marinate chicken overnight in olive oil, salt,
pepper and garlic.
2. Grill chicken til well done then cut into strips.
3. Wash lettuce and cut into bite size pieces.
4. Drain the mandarine oranges of juice. (discard juice)
5. Break up the Raman noodles (not too small) and bake in hot (400 F) until
golden brown.
6. Do the same with the almonds. Be careful not to burn them.
7. Toss the lettuce with the green onions, noodles, slivered almonds and sesame
seeds.
8. Add commercially prepared Sesame dressing (it is really good at Costco);
mix well
9. Place lettuce in individual bowls and top with manderine oranges and the
chicken; serve
