Clostridium perfringens

 

Onset: 8 – 22 hours

 

Duration: 12 – 24 hours (1-2 weeks)

 

Symptoms: diarrhea, cramps, rarely nausea and vomiting.

 

Typical foods: cooked meat and poultry, gravy and beans.

 

Contamination source: soil, raw foods by way of animal and human feces.

 

Prevention: thorough heating and rapid cooling of foods.
