Here's one from my own recipe book that I used to refer to on a rather regular basis called; 
"Holy Crap!...Company's Coming and I Have Nothing to Feed Them!
A little freshly whipped cream and a good strong cup a joe and you're in business like Martha Stewart!  And with way less clean-up!
I use golden delicous apples because they seem to need less added sugar as apposed to granny smiths.
Lightning Quick Tart Tatin

Approximately 6 Golden Delicious Apples
4 tablespoons butter
3 tablespoons grandulated sugar (more to taste if you like)
A pinch of cinnamon
1 box of frozen puff pastry sheets
(Thaw 1 sheet 15mins. prior to use)

Peel, core, and quarter the apples.  In an oven-proof skillet, heat the butter until it starts to brown slightly, then add the apples.  The next step is important:  leave the apples to caramelize.  Don't touch or move them around in the skillet.  This will hinder the caramelization process.  When the apples are browned on one  side, add the sugar.  Caramelize the apples on the second side and then add the cinnamon.  Toss to coat.  Remove the apples from the heat and using a fork or tongs, arrange the apples decoratively in the skillet with the core side fancing up.  Place thawed puff pastry sheet over the top of the apples and tuck in the corners.  Bake the pastry according to package directions until golden and puffy.  Cool slightly and then place a serving platter upside-down on top of the skillet.  Carefully turn over the platter.  Serve at room temperature with whipped cream.
